#6. Grape Wine Manufacturing Process in Details
Grapes Wine manufacturing is run from thousand years; wine making is not only art but also a science.
Step 1 Harvesting
Harvesting is an initial and important step in winemaking.
Grapes are the only fruit the having acids, esters, and tannins (texture element which adds bitterness and astringency to the wine) which is essential for natural wine.
Harvesting is done with manually or mechanically but many winemakers prefer the manual because mechanical harvesting is tough on the grapes. Once grapes are taken out from the winery they are sorted and rotten.
Step 2 Crushing
For many years the grapes are crushed using the feet but nowadays vine makes use the machinery for this process of crushing.
Pick up all selected grapes and send it to the crusher where crusher crush the grapes and transfer to the die- juicer
Die-juicer takes the pulp from the juice, while impurities from the crushing process are used as manure
Then the juice will send to the fermentation
One way to press the grapes is to use bladder pres, blander presser a large cylindrical container which contains bags that is inflated and deflated several times.
Due to this process, the grapes are squeezed until all the juice has taken out. You can separate the solid form using centrifugal process.
Maceration is time spent while skins and seeds are left with the juice, which will basically of few weeks.
For White Wine Manufacturing, the winemaker will suddenly crush and press the grapes and separate the juice from the skins, seeds, and solids. This is to prevent unwanted color and tannins from leaching into the wine.
For Red Wine Manufacturing, it is exactly opposite to the white wine making process where grape juice is left in contact with the skins to acquire flavor, color, and additional tannins.
Step 3 Fermentation
For Fermentation process initially, the juice is chilled in stainless steel tanks or oak barrels.
Then the yeast is added into the stainless steel tanks or oak barrels with chilled juice for Fermentation of wine.
This is known as first fermentation of wine, Fermentation continues until sugar content of grapes is converted into alcohol which takes around 2 months.
To make sweet wine, they will stop the process before all sugar converted into alcohol.
Step 4 Clarifications/ Maturation
Clarification or Maturation is the process in which solids such as dead yeast cells, tannins, and proteins are removed.
Store the first fermented wine transfer further in stainless steel tanks or oak barrels for 1.5 to 2 month for maturation or Clarification.
Step 5 Testing
Once maturation process is completed wine is ready, so it is time to test the stability of the wine.
Then it is filtered to screen the balance of fine particles.
Step 6 Aging Or Bottling
Finally after taking test vine maker has two options whether the wine is kept for additional aging or suddenly packed into bottles.
Additional aging will produce a smoother, rounder, and more vanilla flavored wine.
When wine is exposure into the oxygen while additional aging it will decrease tannin and helps the wine reach its optimal fruitiness.
One can pack the wine in the bottle; bottles which are washed with filtered water to remove bacteria and germs.
